  • 3 ½4 lb beef shoulder
  • 1 large onion
  • 2 cloves garlic
  • 2 tbsp olive oil
  • 3 cups chicken broth
  • 1 cup prunes
  • 2 apples
  • 2 tbsp cornstarch

Instructions

  1. Trim excess fat from the beef shoulder and cut it into 2-inch chunks. Pat dry to enhance browning.
  2. Heat a Dutch oven over medium-high heat, add olive oil, and brown the beef chunks in batches until golden. Set aside.
  3. In the same pot, sauté diced onions until softened (3-4 mins), then add minced garlic for added aroma.
  4. Deglaze with apple juice, scraping up browned bits from the bottom. Return beef, add chicken broth, and bring to a simmer.
  5. Cover and let simmer for an hour; skim excess fat if necessary.
  6. After an hour, stir in prunes and sliced apples; simmer for an additional few minutes.
  7. Mix cornstarch with some stew liquid to create a slurry, then stir back into the pot until thickened.
  8. Serve hot alongside your favorite sides.
