  • 1 pound (450g) cremini or button mushrooms, cleaned and halved
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme (or 1 tablespoon fresh thyme leaves)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon red pepper flakes (optional)
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Clean the mushrooms gently with a damp paper towel and halve larger ones.
  3. In a mixing bowl, whisk together the balsamic vinegar, olive oil, garlic, thyme, salt, black pepper, and red pepper flakes.
  4. Add the mushrooms to the bowl and toss until well coated in the marinade. Let sit for about 5 minutes.
