  • 14 oz rice noodles (ramen or shirataki)
  • 0.5 oz garlic (minced)
  • 2.2 oz shallot (thinly sliced)
  • 0.6 oz ginger (grated)
  • 5 oz carrot (julienned)
  • 15 oz baby bok choy
  • 32 oz chicken stock
  • 2 tbsp fish sauce
  • Juice of half a lime
  • Optional garnishes: cilantro, jalapeno slices

Instructions

  1. Prepare the aromatics by combining minced garlic with sliced shallot in one bowl, and mixing grated ginger with julienned carrots and sliced shiitake mushrooms in another.
  2. Cook rice noodles according to package instructions, then drain and toss with oil.
  3. In a large soup pot over low heat, sauté garlic and shallot in toasted sesame oil until fragrant.
  4. Add ginger, carrots, and shiitake mushrooms; sauté for about two minutes.
  5. Pour in chicken stock; bring to a gentle simmer for 4-5 minutes.
  6. Stir in shredded chicken and bok choy; simmer for another minute until bok choy is vibrant but crunchy.
  7. Mix in cooked noodles; gradually season with fish sauce to taste.
  8. Off heat, add lime juice and garnish with jalapenos and cilantro if desired.
