  • 2 lb boneless skinless chicken thighs
  • 6 garlic cloves, thinly sliced
  • 1 piece ginger (3 inches), peeled and finely chopped
  • 1 bundle scallions (6 to 8 oz), thinly sliced
  • 4 tsp kosher salt
  • 10 cups water
  • 8 oz dried ramen noodles or curly noodles
  • 1 cup carrot, cut into thin matchsticks
  • 1/4 cup black rice vinegar
  • 1/4 cup soy sauce
  • 2 tbsp toasted sesame oil

Instructions

  1. In a large pot over medium heat, sauté sliced garlic in a splash of water until fragrant. Add chopped ginger and the white parts of the scallions; sauté for another minute.
  2. Add chicken thighs along with salt and pepper. Pour in water and bring to a boil; then reduce heat and simmer for about 15 minutes until chicken is cooked through.
  3. Remove chicken to shred into bite-sized pieces. Add ramen noodles and matchstick carrots to the broth; stir gently to cook evenly.
  4. After about 5 minutes, return shredded chicken to the pot along with black rice vinegar, soy sauce, and toasted sesame oil. Stir well.
  5. Serve hot garnished with green scallion parts and crispy chili oil if desired.
