  • 250g gala apples (peeled and finely diced)
  • 184g unsalted butter (browned)
  • 100g dark brown sugar
  • 100g granulated sugar
  • 250g all-purpose flour
  • 1 egg + 1 egg yolk (room temperature)
  • 2 teaspoons vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • Ground cinnamon

Instructions

  1. Prepare the apples by tossing them with dark brown sugar, cinnamon, salt, and lemon juice. Cook until caramelized and set aside to chill.
  2. Brown the unsalted butter over medium heat until golden brown and fragrant; cool slightly.
  3. In one bowl, mix dry ingredients: flour, baking soda, cream of tartar, cinnamon, salt, and cornstarch. In another bowl, whisk together cooled brown butter with sugars and vanilla; add eggs and blend well.
  4. Fold in the chilled apples then gently combine with dry ingredients until just mixed; chill dough for 2–3 hours.
  5. Preheat oven to 350°F (175°C). Roll chilled dough into balls and coat with cinnamon-sugar mixture; place on a lined baking sheet.
  6. Bake for 12–14 minutes or until edges are golden but tops remain puffy.
