  • ½ pound Italian sausage
  • 1 apple (cored and diced)
  • ½ onion (diced)

  • ¼ cup pecans (roughly chopped)

Instructions

  1. Preheat oven to 400°F (200°C). Slice butternut squash in half lengthwise and scoop out seeds.
  2. Lightly oil cut sides, season with salt and pepper, then place cut side down on a baking sheet.
  3. Bake for 40–45 minutes until tender.
  4. Brown the Italian sausage in a sauté pan over medium heat; add onion, garlic, and spinach, cooking until wilted.
  5. Stir in diced apple, cranberries, and pecans; mix well.
  6. After baking, scoop some flesh from the squash halves and fill with the sausage mixture.
