  • 150 g granulated sugar
  • 150 g granulated sugar
  • 1 tsp salt
  • 1 tbsp cornstarch
  • 4 egg yolks
  • 2 tbsp cornstarch
  • 600 ml milk (whole, skimmed, lactose-free, or plant-based)
  • 50 g granulated sugar
  • 1/4 tsp salt
  • 2 tsp vanilla bean paste

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Peel and slice the apples into thin rounds. Toss with sugar and salt; let sit to extract moisture.
  3. Cook the apples in a pan over medium heat for about 15-20 minutes until tender but not mushy.
  4. For the custard, whisk egg yolks with cornstarch. Heat milk with sugar and salt until warm, then slowly combine with egg mixture while whisking constantly. Cook over low heat until thickened.
  5. In a baking dish, layer cooked apples and custard until all ingredients are used, finishing with custard on top.
  6. Bake for 40-50 minutes until golden brown. Cool before serving.
