  • 30 g light brown sugar (for filling)
  • 1/2 tsp cinnamon (for filling)
  • 1/4 tsp mixed spice (for filling)
  • 1 tsp cornflour (cornstarch) (for filling)
  • 10 g unsalted butter (for filling)
  • 8 g light brown sugar (for crumble)
  • 17 g plain flour (for crumble)
  • 1/8 tsp cinnamon (for crumble)
  • 175 g unsalted butter (softened, for cupcakes)
  • 175 g light brown sugar (for cupcakes)
  • 3 large eggs (for cupcakes)
  • 175 g self-raising flour (for cupcakes)
  • 1/2 tsp cinnamon (for cupcakes)
  • 1/4 tsp mixed spice (for cupcakes)
  • 175 g unsalted butter (softened, for buttercream)
  • 350 g icing sugar (for buttercream)
  • 1 1/2 tsp cinnamon (for buttercream)
  • 23 tbsp milk (for buttercream)

Instructions

  1. Prepare the apple filling by peeling and chopping apples into small pieces. Cook with light brown sugar, cornflour, cinnamon, and mixed spice over low heat until tender (10-15 minutes). Let cool.
  2. Make the crumble topping by mixing plain flour, light brown sugar, and cinnamon in a bowl. Rub in unsalted butter until crumbly. Bake at 180C for 10-15 minutes until golden.
  3. For the cupcakes, cream softened butter and light brown sugar until smooth. Add eggs one at a time while whisking. Fold in self-raising flour and spices. Bake at 160C for 20-25 minutes.
  4. Once cooled, core each cupcake and fill with apple mixture. Prepare buttercream by mixing softened butter with icing sugar and cinnamon; pipe onto cupcakes.
  5. Decorate each cupcake with leftover apple filling and crumble topping.
