  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 2 teaspoons sugar
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon

  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon ground cloves
  • 1 cup cold butter
  • 1/2 cup grated apple
  • 1 cup chilled buttermilk
  • 3 tablespoons unsalted butter
  • 3 tablespoons honey
  • pinch salt

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a mixing bowl, whisk together flour, baking powder, baking soda, sugar, salt, cinnamon, nutmeg, ginger, cardamom, and cloves.
  3. Cut in cold butter until the mixture resembles coarse crumbs.
  4. Fold in grated apple and then add buttermilk; mix until just combined.
  5. Roll out dough to about ½ inch thick and cut into rounds.
  6. Bake on a lined baking sheet for 20 minutes or until golden brown.
  7. For the glaze, melt butter and honey together with a pinch of salt; brush over warm biscuits before serving.
