  • 4 pound center cut beef loin
  • 5 slices smoked turkey bacon (diced)
  • 1 large shallot (diced)
  • 4 cups fresh baby spinach
  • 6 garlic cloves (minced)
  • 1 small apple (peeled and finely diced)
  • 1/2 cup dried cranberries (chopped)
  • 2 tbsp maple syrup
  • 1 tbsp Dijon mustard
  • 3 tbsp butter
  • 1 cup chicken broth
  • 1 1/2 tbsp all-purpose flour
  • 4 medium sweet potatoes
  • 2 tbsp avocado or olive oil
  • 1 to 1 1/2 tsp salt
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 2 tsp herbs de provence

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Sauté diced turkey bacon in a large skillet until crispy. Remove from skillet and set aside.
  3. In the same skillet, sauté shallots and minced garlic until translucent. Add spinach until wilted.
  4. In a mixing bowl, combine cooked bacon, shallots, spinach, apple, cranberries, maple syrup, mustard, herbs, salt, pepper, and paprika.
  5. Slice the beef loin lengthwise and pound it gently to even thickness.
  6. Spread the filling over the opened loin and roll tightly; secure with kitchen twine.
  7. Place the roll seam-side down in an oven-safe skillet with melted butter and whole garlic cloves.
  8. Roast until cooked through; let rest before slicing.
