  • 3 thinly sliced apples
  • 5 oz arugula
  • 1/4 cup thinly sliced red onion
  • 1/2 cup chopped figs
  • 1/2 cup goat cheese crumbles
  • 1 cup pecan halves
  • 3 Tbsp balsamic vinegar
  • 1/2 cup olive oil
  • 4 Tbsp maple syrup (divided)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F.
  2. In a bowl, toss pecans with 2 tablespoons of maple syrup and a pinch of salt. Spread them on a parchment-lined baking sheet and roast for 5–7 minutes until toasted. Allow them to cool.
  3. In another bowl, whisk together balsamic vinegar, olive oil, remaining maple syrup, Dijon mustard, lemon juice, minced garlic, pepper, and salt.
  4. In a large salad bowl, combine arugula, sliced apples, chopped figs, red onion, roasted pecans, and goat cheese. Drizzle half of the dressing over the salad and gently toss before serving.
