  • 1 can (20 oz) pineapple tidbits in juice
  • ½ cup low sodium soy sauce
  • ¾ cup low sodium chicken broth
  • ½ cup diced red onion
  • 1 chopped red bell pepper
  • ½ cup brown sugar
  • Optional: chopped cilantro and diced cooked bacon for garnish

Instructions

  1. Preheat your oven to 425°F (220°C). Lightly spray an 11 x 7-inch baking dish with cooking spray.
  2. In a large mixing bowl, whisk together brown sugar, soy sauce, minced garlic, and chicken broth until well combined.
  3. Add uncooked rice, diced onion, chopped bell pepper, pineapple tidbits (with juice), and diced chicken to the bowl. Stir until everything is evenly mixed.
