  • 2/3 cup sliced cherry tomatoes
  • 1/2 cup chopped red bell pepper
  • 1/3 cup sliced kalamata olives
  • 1/4 cup chopped red onion
  • 1/4 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup extra virgin olive oil
  • 1/4 cup red wine vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon oregano
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. In a large mixing bowl, combine chickpeas, cucumber, cherry tomatoes, red bell pepper, kalamata olives, red onion, feta cheese, and parsley.
  2. In a mason jar, add olive oil, red wine vinegar, Dijon mustard, oregano, garlic powder, salt, and pepper. Seal and shake until well mixed.
